Smith sustained damage to his left arm and leg, puncture wounds to the abdomen, and injuries to his right hand.
The extent of his injuries is still being evaluated.
He underwent surgery and was in stable condition in Scarborough general hospital in Tobago as of Sunday.
Smith's wife, Joanna, confirmed that he was aware of what was happening and could communicate a little, although he was still under strong medication.
The shark was identified as a bull shark.
A woman expressed gratitude to two friends who bravely stayed in the water to fend off a shark during an attack.
The shark was approximately 8-10ft long and 2ft wide.
The couple was on holiday and due to fly home that day.
The Foreign Office offered support to the family.
Beaches and coastal areas were closed, and a $10,000 bounty to capture the shark was retracted.
Last year, there were 91 shark attacks worldwide, resulting in 14 fatalities.
